The four hundred years since colonization have brought European, African and Asian techniques, ingredients and tastes to the Chesapeake Bay. European colonists and Africans both enslaved and free were influenced by indigenous ingredients and Native American cooking and created uniquely New World foods. The nineteenth century saw the development of industries based on the bounty of the Bay and the rising popularity of oysters, blue crab and turtle soup throughout the greater Mid-Atlantic. Waves of immigrants brought their own cuisines to the mix, and colcannon, brisket, sauerkraut and fish peppers are now found on Chesapeake tables. Local author, scientist and blogger Tangie Holifield weaves together the unique food traditions of the Bay, telling the stories of each culture that has contributed to its bounty.

There was perhaps no region more opposed to Prohibition than Baltimore and Maryland. The Free State was defiant in its protest from thoroughly wet Governor Albert Ritchie to esteemed Catholic Cardinal James Gibbons. Maryland was the only state to not pass a "baby" Volstead enforcement act. Speakeasies emerged at Frostburg's Gunter Hotel and at Baltimore's famed Belvedere Hotel, whose famous owls' blinking eyes would notify its patrons if it was safe to indulge in bootleg liquor. Rumrunners were frequent on the Chesapeake Bay as bootleggers populated the city streets. Journalist H.L. Mencken, known as the "Sage of Baltimore," drew national attention criticizing the new law. Since Mary Pickersgill sewed Old Glory on the floor of a local brewery, Baltimore has been a beer-drinking town. By the 1950s, Gunther and National Bohemian had joined advertising forces with the Orioles and the Colts in a spirited battle with American, Free State and Arrow for the palates and wallets of the Chesapeake Bay's burgeoning beer-drinking population. The roots of Maryland winemaking are surprisingly deep. The state's first known vines were planted in 1648, and a later Marylander, John Adlum, established his place as the father of American viticulture.
