Inspired by Florida's famed Mai-Kai restaurant, Bill Sapp and Lee Henry opened the Kahiki Supper Club in 1961. Patrons lined up for hours to see the celebrities who dined there--everyone from Betty White to Raymond Burr.

Sapp and Henry set out simply to build a nice Polynesian restaurant and ended up establishing the most magnificent one of them all. Outside, two giant Easter Island heads with flames spouting from their topknots stood guard while customers dined in a faux tribal village with thatched huts, palm trees and a towering fireplace moai. One wall featured aquariums of exotic fish and another had windows overlooking a tropical rainforest with periodic thunderstorms. For nearly forty years, the Kahiki was the undisputed center of tiki culture.

Through stories and recipes nearly lost to time, author Paul Vachon explores the history of the Motor City's fine dining, ethnic eateries and everything in between. Grab a cup of coffee - he's got stories to share.

While some restaurants come and go with little fanfare, others are dearly missed and never forgotten. In 1962, patrons of the Caucus Club were among the first to hear the voice of an eighteen-year-old Barbra Streisand. Before Stouffer's launched a frozen food empire, it was better known for its restaurants with two popular locations in Detroit. The Machus Red Fox was the last place former Teamsters president Jimmy Hoffa was seen alive.

Owners of the General Equipment company opened the restaurant chain Burger Chef, intending to promote their equipment they instead sky-rocketed themselves into owning the second largest burger chain in America.

Frank P. Thomas Jr., Donald J. Thomas, and Robert E. Wildman, owners of the General Equipment Company, entered into the fast-food business by opening a 15¢ hamburger restaurant called Burger Chef in Indianapolis in 1958. General Equipment was a manufacturer of restaurant machinery and built the equipment installed in each Burger Chef store. The partners started their new Burger Chef division to sell more equipment; they never could have imagined that Burger Chef would eventually grow to become the nation's second-largest hamburger chain and beloved by customers in towns and cities across America. Burger Chef continued in business until 1982, cooking its popular flame-broiled hamburgers and introducing its memorable advertising icons, Burger Chef and Jeff.

Cincinnati chili is its own special creation with a unique flavor and style. Uncover the essential parlors originating and serving this unique Cincinnati specialty in this thorough history of its roots and restaurants.

Cincinnati is certainly judged by its chili. Some claim it's not even chili, but those are just fighting words to natives who have developed the crave. Cincinnati is a long way from El Paso, and our chili is not Tex-Mex style. It is a unique blend typically served as a three-way: over spaghetti and covered in shredded cheddar cheese. From its 1922 roots with the Slavic-Macedonian immigrant brothers Kiradjieff in a burlesque theater, Cincinnati chili has become a million-dollar industry supporting 250 chili parlors. Many chili parlors have come and gone, but a few familiar names remain: Dixie, Camp Washington, Gold Star, Price Hill and Skyline. This is their amazing chili story.

Compiling more than 100 family recipes, founder of the Akron Recipe Project Judy Orr James serves up a history of home cooking in the Rubber City.

From the city's founding in 1825 through the years following World War II, numerous ethnic and cultural groups made Akron home. With each new arrival, the city's food changed and deepened to delicious effect. Polish immigrants brought pierogi to the area, and Jews introduced Old World favorites like kugel and hamantaschen. African Americans seeking a better life in the North enriched the Akron palate with the unique and southern-inspired dishes of their ancestors. Last but not least, there is the sauerkraut ball, Akron's official food and favorite snack served at local restaurants, cocktail parties, holiday celebrations, and game day gatherings.

Over the years, Cincinnati has earned a reputation for conservatism and keeping to itself, especially regarding food, but that’s changing. Old favorites like cinnamon-scented chili on spaghetti, ice cream with huge chocolate chunks and old-fashioned German butchers selling goetta, brats and metts are being rediscovered—and in some cases re-created. A similar urge for experimentation and innovation from restaurants, farmers’ markets and food producers is bringing new energy to the city’s tables.

A culinary history of the Gateway City and the memorable restaurants that once made their home there.

St. Louis is a food town, but of the many restaurants that have captured the heart of the city, some are no longer around. Rossino’s low ceilings and even lower pipes didn’t stop the pizza-hungry residents from crowding in. Jefferson Avenue Boarding House served elegant “Granny Food” in plush surroundings. King Burgers and onion rings ruled at the Parkmoor. Dohack’s claimed it was the first to name the “jack salmon.”

Author Ann Lemons Pollack details these and more restaurants lost to time in the Gateway City.

“Few St. Louisans know the history of the St. Louis food scene like local food and travel writer Ann Lemons Pollack. . . . The book is a treasure trove for St. Louis history-lovers, beginning with an extensively researched look at the food served at the 1904 Louisiana Purchase Exposition—better known as the 1904 World’s Fair—hosted in St. Louis. She debunks some myths—hot dogs were not “invented” at the fair, but perhaps found a wide audience there—and charts the various restaurants and cafes that fed eager fairgoers.”—Feast Magazine

Despite a brewing pedigree richer than that of Milwaukee or St. Louis, Cincinnati’s role in American beer history is quite often underappreciated.

Drawing on years of research, Michael D. Morgan, author of the award-winning Over-the-Rhine: When Beer Was King, tackles this subject with a fresh perspective. Complete with new findings, the true story of the city’s first brewer comes to light, as do the oft-heralded deeds - and overlooked misdeeds - of the beer barons who built empires their progeny drove to ruins. From the story of the Scottish brewery that made Cincy famous for English ales, through forgotten Prohibition political scandals, to the birth and rise of the modern craft beer movement, Cincinnati Beer explores previously untold stories of our beer-soaked past.

Over-the-Rhine is a place where a building owner can stumble upon huge caverns underneath a basement floor or find long-forgotten tunnels that travel far below city streets.

ts present mysteries are attributable to a past that transcends the common story of how cities change over time: it is the story of how a clash between immigrants and real Americans helped rob Cincinnati of its image, its soul and its economy. In the 1870s, OTR was comparable to the cultural hearts of Paris and Vienna. By the turn of the last century, the neighborhood was home to roughly three hundred saloons and had over a dozen breweries within or adjacent to its borders. It was beloved by countless citizens and travelers for the exact reasons that others successfully sought to destroy it. This is the story of how the heart of the Paris of America became a time capsule.
