Midwest

Michigan is home to an amazing array of food and drink brands, each with a fascinating story behind it.

Ready-to-eat breakfast cereals like Kellogg’s and Post changed how the world eats, and Gerber first made baby food commercially available. But the Wolverine State is bursting with many other notable edibles, such as Faygo, American Spoon, Jiffy, Sanders and Vernors. Better Made uses Michigan potatoes for its chips. Fudge, pasties and anything made with cherries are also local standards. Others are gone but not forgotten, like Awrey’s and Twin Pines.

Authors Gail Offen and Jon Milan explore the history and stories behind all of these and many, many more.

Inspired by Florida's famed Mai-Kai restaurant, Bill Sapp and Lee Henry opened the Kahiki Supper Club in 1961. Patrons lined up for hours to see the celebrities who dined there--everyone from Betty White to Raymond Burr.

Sapp and Henry set out simply to build a nice Polynesian restaurant and ended up establishing the most magnificent one of them all. Outside, two giant Easter Island heads with flames spouting from their topknots stood guard while customers dined in a faux tribal village with thatched huts, palm trees and a towering fireplace moai. One wall featured aquariums of exotic fish and another had windows overlooking a tropical rainforest with periodic thunderstorms. For nearly forty years, the Kahiki was the undisputed center of tiki culture.

An Iowa Tradition Like No Other

In the 1970s, there were around 450 local meat lockers throughout the state of Iowa. Today, there are little more than 100 left. History is finally back on their side with a wave of consumers wanting to support small businesses, shop small and buy local. Consumers now also have an increased urge to take more day trips and explore regions they don’t see much in the headlines and bring these meats home for their own culinary creations. This is the story of heritage from the old country being passed down by generations of Iowans, and the future of an industry that has endured through decades of decline. Jay Goodvin details the history of Iowa Meat Lockers and their future.

The Church of Tiki

To aficionados of Polynesian Pop, the Kahiki Supper Club was and remains the touchstone for all things tiki. The epitome of a fad that started at the end of Prohibition, it has been rediscovered by each successive generation, with relics of the original “mothership” proudly displayed in tropical restaurants and bars throughout the country. Years after its razing in August 2000, the legacy of the Kahiki continues to inspire artists, entrepreneurs, and other visionaries, many of whom never set foot inside the fabled tiki palace.

From the authors of Kahiki Supper Club comes a new collection of more stories, more images, and more delicious recipes that explain why the Kahiki was such a historically, culturally, and sociologically important artifact of the twentieth century.

The Machus Red Fox was the last place former Teamsters president Jimmy Hoffa was seen alive.

Cincinnati chili is its own special creation with a unique flavor and style. Uncover the essential parlors originating and serving this unique Cincinnati specialty in this thorough history of its roots and restaurants.

Cincinnati is certainly judged by its chili. Some claim it's not even chili, but those are just fighting words to natives who have developed the crave. Cincinnati is a long way from El Paso, and our chili is not Tex-Mex style. It is a unique blend typically served as a three-way: over spaghetti and covered in shredded cheddar cheese. From its 1922 roots with the Slavic-Macedonian immigrant brothers Kiradjieff in a burlesque theater, Cincinnati chili has become a million-dollar industry supporting 250 chili parlors. Many chili parlors have come and gone, but a few familiar names remain: Dixie, Camp Washington, Gold Star, Price Hill and Skyline. This is their amazing chili story.

Compiling more than 100 family recipes, founder of the Akron Recipe Project Judy Orr James serves up a history of home cooking in the Rubber City.

From the city's founding in 1825 through the years following World War II, numerous ethnic and cultural groups made Akron home. With each new arrival, the city's food changed and deepened to delicious effect. Polish immigrants brought pierogi to the area, and Jews introduced Old World favorites like kugel and hamantaschen. African Americans seeking a better life in the North enriched the Akron palate with the unique and southern-inspired dishes of their ancestors. Last but not least, there is the sauerkraut ball, Akron's official food and favorite snack served at local restaurants, cocktail parties, holiday celebrations, and game day gatherings.

Generations of families and restaurateurs have loyally turned out the delectable foods that made Kansas City the food destination that it is. The city's beloved Savoy Grill was not only one of Harry S Truman's favorite haunts but also the restaurant where many Kansas Citians remember eating their first lobster dinner. "Amazin' Grace'? Harris's tiny Kansas City, Kansas H & M Barbecue kept alive Kansas City's "Paris of the Plains'? reputation--for those in the know. Author and native Andrea Broomfield goes on a journey to discover the roots of Kansas City's favorite restaurants.

A Vehicle City Success Story

The history of Flint's food culture has always been largely overshadowed by the stories of its industries. But the origins and rapid expansion of the number of Macedonian Coney shops in Flint paralleled the explosive growth of the city's automotive industry throughout the twentieth century. Born of an immigrant escaping the war-torn Balkans in the early 1900s who combined his idea for one dish with the skills of butchering and meatpacking experts from Wisconsin and Germany, the simple Flint Coney became an institution among the city's autoworkers, tradespeople, and families. Mainstays such as Flint Original Coney Island, Angelo's, and Atlas were frequented by regular patrons for decades, with others such as Capitol and Starlite carrying on those traditions today.

Genesee County native Dave Liske explores these global origins and the cultural history of the Flint Coney.

Al Capone and the Purple Gang came north to keep Canadian whiskey passing through Sault Ste. Marie to Chicago and Detroit. Federal enforcement agent John Fillion double-crossed both his office and the bootleggers. The Grand Hotel on Mackinac Island survived due to gambling and fine Canadian whiskey brought in by rumrunners, sometimes assisted by the Coast Guard. Author Russell M. Cincinnati loves goetta.

Since its arrival with nineteenth-century Germanic immigrants, this humble dish has evolved from peasant staple to ubiquitous delicacy. Once upon a time, Cincinnatians found goetta mostly in neighborhood butcher shops, in Over-the-Rhine’s so-called Goetta Alley and through Sander Packing, its first commercial producer. Now hungry locals scarf it down at diners and white-linen establishments alike and in everything from egg rolls to Reuben sandwiches. Tracing goetta from its Germanic origins and its first stop in Greater Cincinnati to its largest commercial producers, Queen City Sausage and Gliers, food etymologist and “Goettevangelist” Dann Woellert explores goetta’s history in the city that made it regionally famous.

Old favorites like cinnamon-scented chili on spaghetti, ice cream with huge chocolate chunks and old-fashioned German butchers selling goetta, brats and metts are being rediscovered—and in some cases re-created. A similar urge for experimentation and innovation from restaurants, farmers’ markets and food producers is bringing new energy to the city’s tables.

This detailed history of a beloved Queen City institution is sure to offer something new on Findlay Market for the even the most hardcore local history buff.

Located in Over-the-Rhine in the heart of Cincinnati, Findlay Market is Ohio's oldest continually operating market. It opened in 1855 to serve a growing population and quickly became a central neighborhood hub for goods and services. Despite its success, the market experienced dwindling customers and storefront vacancies in the mid- and late twentieth century, reflective of the struggles and decline confronting many cities in those years. Over the last twenty years, market revitalization efforts signal ongoing reinvestment in the city center--a trend transforming many American cities.

Gathering personal stories of the merchants of Findlay Market, historian Alyssa McClanahan shines a light on the past to reveal the market's place in local and American urban history.

Explore the stories of the wine pioneers of the Midwest

Wine and Cincinnati were once a perfect pairing. So much so that the "Queen City'? nickname was inspired by Sparkling Catawba Wine, the delectable libation that sparked the Catawba Craze of the mid-1800s. Longworth's Golden Wedding Sparkling Catawba was most celebrated, but Werk's Golden Eagle and Red Cross, Corneau's Cornucopia, Thompson's Hillside, Bogen's Diamond, Mottier's National Premium, and Schumann's Queen Victoria bolstered the city's reputation as the American Rhineland. These winemakers passed their knowledge onto Lake Erie, the New York Finger Lakes, Pennsylvania, Missouri, and California. Today, that knowledge has returned home, as Henke, Skeleton Root, Meier, and Vinoklet hope to make the city a wine haven again.

For most, beer is a beverage. To a brave few, it’s a lifestyle.

In Tanked in Cincinnati, Mike Morgan and Bret Kollmann Baker drink a few brews with the region’s most legendary brewers, beer reps, and bar owners and take a soul-searching look at why some great ideas succeed wildly, and others ignite a dumpster fire. Along the way, they embrace the nostalgia for the early days in craft beer, answer what it’s like to be the number one enemy of Anheuser-Busch, and ask hard hitting questions like, “Why are there so many kids in this tap room?”

With interviews from Jim Koch of Boston Beer Co., “Mr. Cincinnati” Jim Tarbell, “Beer Dave” Gausepohl, Scott LaFollette of the late Blank Slate, Bryant Goulding of Rhinegeist Brewing Co., and more, Morgan and Kollmann Baker discover how a city once synonymous with America’s best beer lost its beer identity and then reclaimed it with a vengeance.

Local author Jane Simon Ammeson leads a tasty tour of historic Region restaurants.

A wonderful diversity of flavors has defined Northwest Indiana as a dining destination from its early days to the present. Now almost a century old, Teibel's pan-fried fish carries on the tradition of "perch palaces'? like the now lost Phil Smidt's. Pierogis have been a staple at the Cavalier for decades. So great was the demand for frog legs at Vogel's that they used to raise their own. The same dish has remained on the menu at the Town Club since opening in 1947. Serving Northwest Indiana-style, crisped-edge hamburgers, Miner-Dunn and Schoops both survived the onslaught of fast food chains and continue on today.

Cincinnati is the home to food inventions, rivalries and restaurants that stand the test of time.

The Queen City boasts the invention of both Cincinnati chili and goetta. Mecklenburg Gardens, Arnold's, Izzy's and Scotti's have all operated for over a century. The French restaurant Maisonette was the epitome of fine dining, and Wong Yie's Famous Restaurant took Chinese cuisine from street fare to an exotic experience. Busken Bakery and Frisch's vied for Cincinnati pumpkin pie supremacy by taking digs at each other through billboards and redecorating a Big Boy statue in Busken attire. Author Dann Woellert explores the most iconic eateries, the German influence on Queen City food and what makes dining so unique in Cincinnati.

A culinary history of the Gateway City and the memorable restaurants that once made their home there.

St. Louis is a food town, but of the many restaurants that have captured the heart of the city, some are no longer around. Rossino’s low ceilings and even lower pipes didn’t stop the pizza-hungry residents from crowding in. Jefferson Avenue Boarding House served elegant “Granny Food” in plush surroundings. King Burgers and onion rings ruled at the Parkmoor. Dohack’s claimed it was the first to name the “jack salmon.”

Author Ann Lemons Pollack details these and more restaurants lost to time in the Gateway City.

“Few St. Louisans know the history of the St. Louis food scene like local food and travel writer Ann Lemons Pollack. . . . The book is a treasure trove for St. Louis history-lovers, beginning with an extensively researched look at the food served at the 1904 Louisiana Purchase Exposition—better known as the 1904 World’s Fair—hosted in St. Louis. She debunks some myths—hot dogs were not “invented” at the fair, but perhaps found a wide audience there—and charts the various restaurants and cafes that fed eager fairgoers.”—Feast Magazine

Despite a brewing pedigree richer than that of Milwaukee or St. Louis, Cincinnati’s role in American beer history is quite often underappreciated.

Drawing on years of research, Michael D. Morgan, author of the award-winning Over-the-Rhine: When Beer Was King, tackles this subject with a fresh perspective. Complete with new findings, the true story of the city’s first brewer comes to light, as do the oft-heralded deeds - and overlooked misdeeds - of the beer barons who built empires their progeny drove to ruins. From the story of the Scottish brewery that made Cincy famous for English ales, through forgotten Prohibition political scandals, to the birth and rise of the modern craft beer movement, Cincinnati Beer explores previously untold stories of our beer-soaked past.

Over-the-Rhine is a place where a building owner can stumble upon huge caverns underneath a basement floor or find long-forgotten tunnels that travel far below city streets.

ts present mysteries are attributable to a past that transcends the common story of how cities change over time: it is the story of how a clash between immigrants and real Americans helped rob Cincinnati of its image, its soul and its economy. In the 1870s, OTR was comparable to the cultural hearts of Paris and Vienna. By the turn of the last century, the neighborhood was home to roughly three hundred saloons and had over a dozen breweries within or adjacent to its borders. It was beloved by countless citizens and travelers for the exact reasons that others successfully sought to destroy it. This is the story of how the heart of the Paris of America became a time capsule.

The Quad Cities have a rich history of brewing that started with the influx of German citizens in the 1800s. Breweries were established on both sides of the Mississippi River. Some of these historic breweries managed to reopen after Prohibition, but national competition ultimately closed the last of these stalwarts in 1956. In 1989, Iowa created a special class “A” brewpub permit, and the first of many brewpubs in the area, Front Street Pub & Eatery, opened in 1992. Blue Cat Brew Pub, on the Illinois side of the river, opened shortly after. The brewing renaissance has helped to establish the Quad Cities as a craft beer destination. Join authors Michael McCarty and Kristin DeMarr as they celebrate the heady heritage of the region.

Join local food writer Teri Horsley as she explores the history of Butler County’s most beloved eateries and the stories behind them.

Butler County has concocted fine food and finer memories for generations. Isgro’s dished out succulent Italian to locals and celebrities alike, including Frank Sinatra and numerous Cincinnati Reds players. Starting off as a Prohibition speakeasy, Nitchtings later evolved into a high-end supper club where many prominent politicians debated the issues of the day. Hickory Hut made its name serving delicious American casual food to fiercely loyal regulars, some of whom ate there three times a day. For decades, fans of Milillo's and Chester’s have argued which is the best pizza in town, a debate that continues today.

Winnebago County has long been a bellwether of Wisconsin beer making.

In the mid-1800s, German immigrants launched small breweries in Butte des Morts, Menasha, Neenah, Oshkosh and Winneconne. By the 1950s, breweries such as Walter Brothers, Peoples and the Oshkosh Brewing Company had a combined output of more than 100,000 barrels of beer annually, and iconic brands like Gem Pilsener and Chief Oshkosh were known across the state. This rich tradition continues today with the rise of modern craft breweries in Omro, Oshkosh and Neenah. Local author and founder of the Oshkosh Beer website Lee Reiherzer reveals stories behind the breweries, past and present, that fostered an enduring beer culture.

A few enterprising women found themselves at the forefront of early brewing in the state, and several early Detroit brewers also served as mayor. Pfeiffer's mascot was designed by Walt Disney Studios. Jackson's Eberle Brewing Company took its fight against local prohibition all the way to the Supreme Court, and the Silver Foam trademark embroiled disputants in a different legal fight. Renowned modern craft brewers grew from humble beginnings, often staving off financial disaster, to establish themselves as local, or even national, juggernauts.

Although often overshadowed by Milwaukee's brewing reputation, Green Bay has its own rich and proud brewing heritage.
