Frenchman Georges Perrier brought the city the highest, most-respected opulence, Le Bec-Fin, for 40 years running. The ultimate seafood institute, Old Original Bookbinder’s, held the title of the world’s largest lobster tank and prepared impeccable oyster Rockefeller. Steve Poses changed the culinary game with the Frog that captivated palates with the infusion of international flavors. The nation’s very first automat, Horn & Hardart’s, consistently delivered near-perfect comfort food classics via vending machine.

Amy Strauss revisits celebrated spaces, unforgettable personalities and must-have recipes that made Philadelphia’s historic restaurants remembered for their delicious moments in time.

Although the industry is all but gone today, New Jersey was once the hub of diner manufacturing, making mobile eateries that fed hungry Americans all over.

Diners are the state's ultimate gathering places--at any moment, high school students, CEOs, construction workers and tourists might be found at a counter chatting with the waitresses and line cooks. Locals yearn for lost favorites like the Excellent Diner and Prout's Diner and still gather at beloved haunts like the Bendix and Tick Tock Diners. Author Michael C. Gabriele offers this delicious history--collected from interviews with owners, patrons and experts--and indulges in many fond memories of classic New Jersey eateries.

Join author Amy Strauss as she traces the sizzling history and culture of a beloved and sustaining Pennsylvania Dutch iconic dish, scrapple.

The name may remind you of a certain word-based board game, but scrapple has been an essential food in Mid-Atlantic kitchens for hundreds of years, the often-overlooked king of breakfast meats. Developed by German settlers of Pennsylvania, scrapple was made from the scraps of meat cut from the day's butchering to avoid waste. Pork trimmings were stewed until tender, ground like sausage, and blended with broth, cornmeal, and buckwheat flour. Crispy slabs of scrapple sustained the Pennsylvanians through the frigid winter months and brutal harvest months, providing them with a high-energy and tasty breakfast meal that people enjoy even today.

John Bazzano ordered the killing of the Volpe brothers but did so without the permission of Mafia bosses; his battered body was later found on the street in Brooklyn. Author Richard Gazarik details the shady side of the Steel City during a tumultuous era.

Today, the City of Brotherly Love continues to foster that enterprising spirit of innovation with an enviable community of bold new brewers, beer aficionados and brewing festivals. Pennsylvania brewery historian Rich Wagner takes readers on a satisfying journey from the earliest ale brewers and the heyday of lager beer through the dismally dry years of Prohibition and into the current craft-brewing renaissance

Chesapeake oysters are part of the legacy of the area, history on the half-shell. Read of their beginning (foot-long bivalves!) through cultivation today.

The eastern oyster, the humble bivalve and delicous treat, are the living bones of the Chesapeake, as well as the ecological and historical lifeblood of the region. When colonists first sailed these impossibly abundant shores, they described massive shoals of foot-long oysters but the bottomless appetite of the Gilded Age and great fleets of skipjacks took their toll. Disease, environmental pressures and overconsumption decimated the population by the end of the twentieth century. While Virginia turned to bottom-leasing, passionate debate continues in Maryland among scientists and oystermen whether aquaculture or wild harvesting is the better way forward. Today, boutique oyster farming in the Bay is sustainably meeting the culinary demand of a new generation of connoisseurs. With careful research and interviews with experts, author Kate Livie presents this dynamic story and a glimpse of what the future may hold.

Montgomery County's Agricultural Reserve, created in 1980, was a history-making decision that is a model for land preservation.

Montgomery County's earliest residents, Native Americans, developed agricultural communities and used the shores of the Potomac as a trading spot. European settlers farmed tobacco, eventually collapsing the County's economy until the Quaker community returned fertility to the land. The C&O Canal was the nation's first significant infrastructure project and helped create links to national and international markets. In the 20th century, the Marriott chain developed contemporary, industrialized food that signaled a changing world. The Agricultural Reserve was intended to preserve the county's rural past in the face of rapid change. Along with farming, it also preserved history and foodways.

Claudia Kousoulas and Ellen Letourneau tell this agricultural history through food and recipes.

Oenophile Tom Russ presents the remarkable story of Dr. Konstantin Frank, the father of Finger Lakes wine.

Dr. Konstantin Frank forever changed the palate of American wine. Forced from his home in Soviet Ukraine during World War II, he was astounded by the terroir when he arrived in the Finger Lakes region. Against popular notions, he believed that the vinifera grapes that produced some of Europe's and California's finest wines would prosper in New York. He proved his detractors wrong, and by sharing his knowledge freely with others, Konstantin's innovativeness has allowed the region to produce some of the world's finest Riesling, Chardonnay, Pinot Noir and other varietals. Four generations of Franks have continued his legacy, and their winery has won record numbers of prestigious awards every year.

From home cooks and professional chefs to local eateries and bakeries, food has helped activists continue marching for change for generations. The Sandwich Brigade organized efforts to feed the thousands at the March on Washington. Author Fred Opie details the ways southern food nourished the fight for freedom, along with cherished recipes associated with the era.

Author John Howard-Fusco traces the roots of Cape May's delectable dishes and recipes from long ago to the modern day.

Cape May is America's first seaside resort, and with that comes a mouthwatering food history. The New York Times even proclaimed the city Restaurant Capital of New Jersey. The first settlers, the Kechemeche of the Lenape tribe, feasted on the fish and wild game in the area. The whaling industry briefly brought attention to the island, but Ellis Hughes's 1801 advertisement offering seashore entertainment with fish, oysters, crabs, and good liquors gave birth to a beachside haven. From the mint juleps to the Sunny Hall Café and the Chalfonte, culinary creativity thrives on the shore. Modern chefs like Lucas Manteca at the Red Store and Brooke Dodds's Empanada Mamas help keep the unique flair alive.

Pittsburgh's drinking culture is a story of its people: vibrant, hardworking and innovative. During Prohibition, the Hill District became a center of jazz, speakeasies and creative cocktails.

Today, pioneering mixologists are forging a new and exciting bar revival in the South Side and throughout the city. Pull up a stool and join Cody McDevitt and Sean Enright as they trace the history of Steel City drinking, along with a host of delicious cocktail recipes.

The Southside, Diamondback and the Preakness - Marylanders imbibe history in their native cocktails, from local favorites to little-known classics.

Early residents favored fruit brandies and potent punches until the Civil War, when rye whiskey laid claim to local palates. During the golden age of the cocktail, grand hotels like Baltimore's Belvedere created smooth concoctions such as the Frozen Rye, but the dry days of Prohibition interrupted the good times. Using historic recipes with modern twists from renowned mixologists, Greg and Nicole Priebe mix up one part practical guide and three parts Maryland history and top it off with a tour of the current craft cocktail and distilling scenes.

In the same decade, Brooklyn teenager William Black started Chock Full o’Nuts with $250 and a dream.

Third wave coffeeshops like Joe and Ninth Street Espresso offer single origin pour overs and push the limits of latte art. Through stories, interviews and photographs, author and coffee professional Erin Meister shares Gotham’s caffeinated past and explores the coffee-related reasons why the city never sleeps.

“Men are divided into three classes. There are men who love their liquor, men who sell liquor, and politicians who are on both sides of the question.”

Before Prohibition, a number of liquor merchants operated in the District of Columbia. This was a time when intoxicating beverages were at the forefront of the national conversation and the District, being subject only to laws passed by Congress, served as a testing ground for regulation. Learn the stories of the Poison Squad, Lemonade Lucy, the Sons of Temperance, and the sad tale of Senators baseball star Ed Delahanty. On the political front, read a blow-by-blow account of the decade long whiskey war, which involved every branch of the federal government as it sought to answer the question, “What is whiskey?”

Local author and whiskey producer Troy Hughes provides a glimpse into Washington whiskey culture and the businesses of producers at the turn of the twentieth century.

Explore the fasciniating history of Prohibition in one of the places where it was most defied-- Baltimore, Maryland.

There was perhaps no region more opposed to Prohibition than Baltimore and Maryland. The Free State was defiant in its protest from thoroughly wet Governor Albert Ritchie to esteemed Catholic Cardinal James Gibbons. Maryland was the only state to not pass a baby Volstead enforcement act. Speakeasies emerged at Frostburg's Gunter Hotel and at Baltimore's famed Belvedere Hotel, whose famous owls' blinking eyes would notify its patrons if it was safe to indulge in bootleg liquor. Rumrunners were frequent on the Chesapeake Bay as bootleggers populated the city streets. Journalist H.L. Mencken, known as the Sage of Baltimore, drew national attention criticizing the new law. Author Michael T. Walsh presents this colorful history.

New Jersey has produced wine since the 1700s and throughout the history of the state. Grab a glass and enjoy the history of the grape in the Garden State.

The finely aged story of New Jersey wine is older than the United States itself. As early as 1767, the colony's wines were garnering awards from London's Royal Society of the Arts. The vineyards continued to grow through some of the country's most turbulent times. In 1864, at the height of the Civil War, Renault Winery was founded, and it continues to operate today. While Prohibition nearly destroyed the industry, in 1933, the founding of Tomasello's Winery in Hammonton helped revive it. In 1980, only seven wineries were in operation, but by 2011, the state boasted over thirty-four--many of which are winning awards in some of the world's most respected wine competitions. So grab a glass and join winemaking expert Sal Westrich as he tracks the history of New Jersey wine, accompanied by photos by John Muth.

Join Rob Kasper as he uses interviews, stunning vintage images and a few recipes to pop the cap on Charm City's brewing history.

Since Mary Pickersgill sewed Old Glory on the floor of a local brewery, Baltimore has been a beer-drinking town. At the turn of the nineteenth century, German immigrants erected elaborate breweries and leafy beer gardens, and the thirteen awful years of Prohibition only whetted the city's thirst for frosty pints. By the 1950s, Gunther and National Bohemian had joined advertising forces with the Orioles and the Colts in a spirited battle with American, Free State and Arrow for the palates and wallets of the Chesapeake Bay's burgeoning beer-drinking population. Baltimore beer scholar and journalist Rob Kasper traces the sudsy story from the days when alehouses lined the Jones Falls to the tales behind the current crop of local brewers who are fermenting a craft brew revival.
